1.       Sweet Potato Crescents

What you need

  • Active dry yeast (2 packages)
  • Cut, mashed and drained sweet potatoes (1 can)
  • Shortening (half a cup)
  • Egg (1, large)
  • Sugar (half a cup)
  • Warm water (1 cup)
  • Salt (1 and a half teaspoon)
  • All purpose flour (5 cups)
  • Butter (1/4 cup, melted)

Preparation

  • Take a large bowl and add in yeast and water. Allow it to stand for 5 minutes.
  • Add in the mashed sweet potatoes, shortening, egg, sugar and 3 cups of flour.
  • Use the remaining flour to make stiff dough.
  • Knead the dough on a floured surface till it is smooth and flexible.
  • Place the kneaded dough in a greased bowl and turn it to make sure it is covered with grease all over.
  • Cover the bowl and place it in a warm place until it grows in size. This should take about an hour.
  • Divide the risen dough into 3 even parts and roll up each into a 12 inches wide circle.
  • Cut the circles into wedges and brush each wedge with butter.
  • Roll the buttered wedges from the wide end and place it point end down on a greased baking sheet.
  • Cover the sheet and allow the dough the rise for 40 minutes.
  • Bake the wedges in the oven at about 375°F until they turn golden brown in color.
  • Remove the baked wedges from the oven and place on a cooling rack.
  • Serve after cooling

2.       Cranberry Sweet Potato Muffins

What you need

  • Baking powder (2 tspns)
  • All purpose flour (1 and a half cups)
  • Salt (3/4 tspn)
  • Ground cinnamon (half a tspn)
  • Egg (1, large)
  • Milk (half a cup)
  • Ground nutmeg (half a tspn)
  • Sweet potatoes (cold and mashed, half a cup)
  • Cinnamon sugar (as needed)
  • Cranberries (1 cup, chopped or frozen)
  • Butter (1/4 cup, melted)

Preparation

  • In a large bowl, add sugar, baking powder, flour, cinnamon, nutmeg and salt and mix thoroughly.
  • In a separate smaller bowl mix the sweet potatoes, milk, egg and butter thoroughly. Add dry ingredients till they are moist and then fold in the cranberries.
  • Grease 10 paper-lined muffin cups and fill them with the muffin batter till they are half full.
  • Sprinkle cinnamon sugar on top and pop the muffin cups in the oven.
  • Bake at 375°F for 20 minutes or till the toothpick you insert in the muffins comes out clean.
  • Take out the cups from the oven and allow the muffins to cool on a wire rack.
  • Serve warm.
